The three things you mentioned are not types of veterinarians. They are different positions at a veterinary hospital. Only the veterinarian is a doctor. They are the one that examines, diagnoses, and prescribes treatment to the patients. Veterinarians are doctors and they went to school for 8 years.
Veterinary technicians are kind of like nurses, but in a veterinary hospital. They assist the doctors as needed by drawing blood, running bloodwork, placing IV catheters, shooting X-rays, cleaning teeth, ears and other things like that. These people are not doctors and they only have a 2 year degree.
An assistant is the lowest one. No degree is required. They typically do the grunt work like cleaning cages, walking dogs, and even stuff like dusting, mopping, and other stuff to keep the clinic clean. They might also have some light administrative duty depending on the clinic such as answering phones, booking appointments and checking people out.
Back to your initial question. There are in fact many types of veterinarians. All attend veterinary school and all are doctors, but you can divide them up based on the type of animals they work with or if they have chosen to specialize in a specific body system.
Most people are the most familiar with a small animal practitioner. These are the people you take your family dog or cat to. They mostly work on dogs and cats, but some will see rabbits, ferrets and birds also.
There are also those that work with food animals such as cattle, sheep, pigs, and goats. These are typically referred to as food animal vets or large animal vets.
Equine vets treat mainly horses.
Exotic vets treat wildlife, birds, and zoo animals.
Mixed animal vets will treat a wide variety and typically work in a rural community where they are the only vet.
Similar to medical doctors, veterinarians can choose to specialize in a certain biological area. There are cardiologists, neurologists, dermatologists, ophthamologists, behaviorists, etc. These specialists are usually employeed by universities or veterinary specialty centers.
